We have Adaptec's 6805 and 16 WD4 1TB disk in RAID 10, which stripe size on adaptec shoud I choose?

The answer is "it depends". Depends of what you want to do with your target. If your desination software is IOPS intensive use smallest possible stripe side. If you care about MBPS - use largest but not larger then 256KB (if we're talking about hosting Windows OS). I'd stick with 64KB stripe size, 64KB allocation unit for NTFS. And the same allocation unit value for virtual disk (if you'd host StarWind images on your Adaptec-controlled disk set).
